- 4 discs fresh duck liver
- 1 dl Sauternes jelly
- 50 gram butter (to fry the bread in)

- Herb cress
Reindeer fillet, quail eggs and fresh truffle

- 8 quail eggs
- 1 whole truffle (to grate)
