Sometimes simplicity is the best and especially after one of the biggest food holidays of the year. That's why I offer fried pork with potato buns and raw-stirred lingonberries with smoky whiskey in it. As with all other home cooking, it's good, filling, fairly cheap and very easy to cook on the grill. So sink into the TV sofa and learn how to cook real potato buns.

  • 1 kg rimmed roast pork
  • 2 kg boiled cold potatoes
  • 1 Big yellow onion (or 2 small)
  • ½ dl flour
  • 4 egg
  • salt & black pepper
  • rapeseed oil and butter to fry in

Stir-fried lingonberries with smoky whiskey

  • 2 dl frozen lingonberries
  • 1 dl powdered sugar
  • 5 cl smoky whiskey e.g. Mackmyra "Swedish Smoke"

Ostrich eggs on a griddle

Egg toddy & Spanish omelette on ostrich egg

In this week's episode, there will be some Easter crafts around the grill together with Sampev2. We kick-start with a steady toddy on ostrich egg and the finest Värmland whiskey from the Nordmarken distillery.
After that, we fold the rest of the ostrich egg into a lush Spanish omelette that is loaded with smoked ostrich meat, salsiccia, potatoes, onions and chili. If you don't have ostrich eggs at home in the fridge, it works perfectly to replace them with chicken eggs in the recipe.

Easter food with Edward Blom

Old man's stir-fry and butter-baked salmon side with Edward Blom

Finally Easter and perhaps the holiday that I appreciate the most of all. Spring and summer are ahead of us with sun, warmth, food and drink. It is also the weekend that symbolizes the starting point for many stovetop lovers when the stoves must be dusted off and taken out of winter storage.
For this week's well-fed Easter episode on Skeppsholmen, I have once again invited the gastronomist Edward Blom, who very generously shares his never-ending knowledge of food history and old traditions.
So what do you serve when big relatives come to visit during the Easter weekend?
I would highly recommend baking a whole side of salmon in butter. Now don't fuss with grating on a few small slices of butter, but boil up half a kilo, which you then pour over the salmon. Then toss the butter around the fish with your long frying spatulas to the desired internal temperature of around 50 degrees. A neat cooking method that brings out every little salmon molecule to perfection for all the senses.
Serve with pickled fennel salad, cold salmon-flax sauce with squeezed fried lemon and the first new potatoes tossed in butter of the year.

Then it's time for a slightly more modern pasta dish that appeared in the 80s but has gained a lot of hype in recent years.
Actually, it's not much more remarkable than pimping up a penne Arrabbiata with a few deciliters of cream and vodka. Then cut up some salsiccia, crackle and sprinkle over when serving. Also break up a burrata and put on top. Yum!
BUT - the eternal question remains IF it is better to boil 10 cl of vodka OR to mix a couple of strengthening grogs? If you ask me, I'd rather take the groggs, but the pasta is still really awesome ❤️

Raw crab with shredded entrecote and cheese sauce is just one of many toppings for a crispy raw crab. Quick, easy and filling to suit any sunny sports holiday. I top raw crab number two with creamy salmon mixture, capers and red onion. As good as it sounds. Or maybe even better.

One of my most spectacular and memorable moments at the grill was on a cool autumn day outside Skellefteå. There I met the hunter Roger, who very generously shared both deer and also some nice grouse. Join us in this week's episode where we cook both rib tarts on crackling bread and tjædjergryta on a griddle. Of course, we washed down the delicacies with a barrel-aged blueberry wine from Västerbotten.
