Advice before buying a frying pan
Tips to consider before buying your grill.
It pleases me that I often get questions about frying pans or Muurikka as many say and what you should think about when you are faced with the purchase of a frying pan.
There are many important parameters to take into account and below I have tried to summarize what I consider to be important for as worry-free cooking as possible.
The frying pan – the skullcap
The calotte itself that you fry in is of course an important part of the frying pan. Choose a pan that has the most ultimate frying properties for you to succeed in your cooking.
I recommend a pan of carbon steel with a thickness of at least 4 mm for the best experience. Then you get an even distribution of heat over the entire surface to avoid hotspots and the food is cooked evenly.
The carbon steel is also by far the most durable over time and requires minimal maintenance. Carbon steel is usually easier to handle and clean than cast iron.
Carbon steel is perfect for cooking that requires rapid temperature changes, such as frying both smaller and larger pieces of meat, fish, seafood and vegetables.
The purchase is also worth considering. You want a frying pan where you can fry, prepare sauces, cook potatoes and pasta, etc. without it running outside. At the same time, it must not be too cupped so that it becomes a wok, because then it is difficult for the food to lie still on the edge.
Also choose a frying pan where you can really cook on the entire surface and where you have heat all the way to the edges.
The burner
A powerful burner that heats the ENTIRE pan is important. Choose a Spanish burner and as large as possible so that it covers as much of the hob as possible. If you choose a larger frying pan, I recommend a burner that is adapted for a reduction valve of 50 mbar.
Work surfaces
Good work surfaces where you can prepare the ingredients at the hob are important. Either you have a workbench directly connected to the grill or you can buy customized cutting boards or side tables that you attach directly to the grill's handle.
When you compare side tables from different manufacturers, it is important that they meet your specific needs. For me, it is important that the side table functions both as a storage surface for bowls and ingredients but also as a cutting board. You should be able to prepare everything outside at the stove is my recommendation.
The wind protection
Is a very important part that you may not always think about. It is a recurring question in many online forums where it is widely discussed among disappointed buyers. You don't want to buy a new product and then build your own wind protection just because the original one doesn't provide enough protection for small gusts of wind.
I believe that, as far as possible, you should buy a frying pan where the wind protection is integrated into the hood. Detachable pans may have their advantages but at the expense of poorer protection from winds.
Also consider what weather conditions you will be using your grill in. If you live on the coast where it is more windy, it is crucial to have a really effective wind protection.
Waterproof cover
Between cooking sessions, you should be able to easily protect your hob with a cover. Make sure it's 100% waterproof and UV resistant so it lasts for years to come. The frying surface itself or the skull cap must be dry in order not to rust and lose its properties
Working height and ergonomics
An important part that is very rarely apparent from glossy brochures and which is difficult to discover before you start cooking is the working height. The standard working height in a kitchen is 90 cm and that is for a reason. It is so that you can stand upright throughout the cooking without getting pain in your back, shoulders and legs. Therefore, you should not settle for a lower working height just because you are outdoors and cooking. It must be comfortable for everyone involved in cooking around the grill.
Stability
Buy a frying pan that is stable and stands firmly on the ground. A rickety frying pan where the drink and ingredients fall over the edge at the slightest movement makes no one happy.
Size
Frying pans are available in many different sizes. Think about how much food you will usually cook at the same time and choose a size that suits your needs on ALL occasions both now and in the future. The larger the frying pan you buy, the more flexible you become with your cooking. Most of the time we cook at home just for the immediate family, but sometimes relatives and friends come to visit and then you will have to switch things up.
A larger frying pan also creates a greater opportunity to cook entire dishes at the same time, as you use the entire surface to the maximum. So it goes faster and you can keep the finished ingredients warm towards the edges.
Country of manufacture, environment and quality
For the least environmental impact, you should try to choose a frying pan that is made in Europe or preferably in Sweden. It shortens transport and the logistics chain and ensures a good working environment at the manufacturer. The quality requirements are usually higher in European factories, which results in a better end product.
Cleaning and maintenance
After finishing cooking, scrape clean with a spatula and wipe clean with paper towels. Have you cooked e.g. a sauce with milk, the proteins can stick, but then you just rinse the frying pan with warm water and then grease it with a little rapeseed oil.
Reviews and recommendations
Read reviews and recommendations from other customers to get an idea of how well the fryer performs in practice. Then you get ratings and feedback directly from the customers
Price
The price of frying pans varies depending on the material, quality, where it is made and brand. Always compare apples to apples and pears to pears.
Summary
Choose a grill that suits your cooking purposes and preferences in terms of material, size and cleaning. Do your research and compare different options, price and value for money before making your decision.
The most important thing is that cooking outdoors on a grill must be simple and enjoyable. That's just the way it is.
