In this week's episode, I offer a true pub classic of rank, namely Sjömansbiff with beetroot and pickle. I don't know if you can call it a meat stew, but in any case it should cook for a good while together with large amounts of porter and veal stock. ?

  • 5 dl porter
  • 3 dl calf fund

  • 4 tbsp wheat flour (to sift with)

In this week's episode, I offer a real Småland classic that has found its way across the county border to the rest of our elongated country. It will be old-fashioned lard strips from Moheda, which I serve with dill stewed potatoes, capers and beetroot.
In the episode, I also offer clips from Chark SM in Gothenburg, which I was invited to last week. In addition to the manufacturer of Sweden's best butter band 2018, I also meet two other winners from Vindelns rökeri and Nacka köttprodukter. Together we cooked hearty home cooking down by the quayside out on Eriksberg in Gothenburg and enjoyed the autumn weather.

Raw beef with Allumettes fries

Finally time for a classic raw steak in the Captain's way. Served with matchstick fries, fried capers and pickled silver onions. This is truly one of my favorite dishes. Undoubtedly.

Pickled silver onion

  • 1-2 silver onion
  • 2-4 tbsp apple cider vinegar
  • 2-3 tbsp liquid honey

For serving

  • Fried capers
  • Yolk
  • Mâché salad
  • Dijon mustard
