It will be a very tasty open lasagna where the pure and simple flavors really come into their own. A really fresh pasta to enjoy for lunch on hot summer days or as an appreciated Italian entree at fine dining. That it is then rudely simple and quick to cook is just a bonus.

In this week's episode, I offer the old Swedish classic that has danced around in fine dining for decades. However, I recommend that you cook and eat it at home together with good friends. Because just the pleasure of standing with your nose over the grill and smelling the aromas of the fried beef tenderloin and garlic butter together with a better red wine in the glass is unbeatable.
Now don't think that this is an extremely expensive dish just because it is classed as a luxury dish. No, the fact is that it costs less than that sunken takeaway pizza from the jam around the corner. Just like almost all other dishes I cook on my griddle. The simplest is usually the best or hunger is the best spice. Here is the recipe for a classic smash burger that anyone can cook with perfect results.

  • 720 gram high rib sphere

Instructions
 

  • Divide the minced meat into 8 pieces of 90 grams each.
  • Without pressing, shape the mince into round balls
  • Press the minced meat into a hot frying pan using a pan and with a piece of butter paper in between. Salt and pepper.
  • Assemble the burger in a freshly baked bun with fried tomato slices, bacon, cheddar cheese and dressing.
  • Eat and enjoy together with a cold drink

Doubtful combo as the Camerawoman wanted me to cook vegetarian but I was just so hungry for crispy pork. So here comes this year's compromise: Carrot and halloumi steaks with tzatziki and fried pork. However, these steaks turned out really fresh and meaty and are a really good alternative to regular mincemeat steaks. I should listen to Camera Woman more often... Tortillas on a griddle

Baking tortilla bread on a griddle is both easy and impossibly delicious even though I am by no means a baker. In this week's video, I top the tortillas with whole roast lamb fillet, tomato salsa and a lemon yoghurt. This is a dish that you can really impress your guests with and that they will remember forever. Serve the company's best shiraz wine for under a hundred and the dinner is complete.

Lemon yogurt

  • 2 dl Turkish yogurt or light crème fraîche

Instructions
 

Tortilla bread

  • Mix all dry ingredients in a bowl. Heat water to approx. 60 degrees and add to the bowl together with the oil. Knead to a smooth dough.
  • Divide the dough into 10-12 pieces and roll into balls. Roll them out thinly into round loaves.
  • Fry the breads in a medium-hot frying pan or frying pan until they are cooked through. Approx. 1 minute on each side if they are really thin otherwise slightly longer. Turn them a few times during baking.
  • Place the finished loaves under a damp towel until it's time to top them.

Originating from 19th century New York, Eggs Benedict is as exciting to cook as it is to eat. In this week's episode, I screw it up in my own way and present a fully-fed sandwich with shredded entrecote, béarnaise sauce and poached egg. Because if there's something I'm very weak at cooking on the grill, it's just plain sandwiches. I'm also picking up an old holiday habit of drinking a lush Gin & Tonic with food. Finally time to dust off the old classic that was presented for the first time in 1976 in the magazine "Allt om mat". It quickly became a popular dish but also a "controversial" dish thanks to its ingredients. Banana and peanuts don't belong in food, some think, while others just love it. Personally, I've learned to like it over the years just like I can enjoy a well-baked Hawaiian pizza or cheese gratin casserole with pineapple. What do you think?

Salmon fillet topped with a classic tapenade served with white asparagus, hollandaise sauce and butter-fried delicatessen potatoes. Pour the "Rosa Kiss" into the wine glass and enjoy the spring sun outside by the grill.
April but above all Easter is salmon, chicken and rosé wine for me. Simple and easily prepared food that is both light and fresh, in direct contrast to winter's heavy stews. Buon appetito all frying pan lovers ? ⚓️

  • 300 gram olives
  • 2 tbsp caper
  • 2 gaps garlic
  • 4 anchovies
  • 3 tbsp pine nuts
  • ½ dl olive oil
  • ½ dl rapeseed oil

Hollandaise sauce

  • 3 egg yolks
  • 2 tbsp water
  • 200 gram butter
  • 3 tbsp squeezed lemon
  • 1 krm salt

Garnish

  • fried lemon
  • White asparagus
  • chopped parsley
  • grated Västerbotten cheese

Instructions

  • Fill a tall bowl with olives, capers, garlic, anchovies, pine nuts, olive oil and canola oil. Mix with an immersion blender to the desired consistency.

Hollandaise sauce in a pan directly on the grill

  • Melt the butter in a pot.
  • Whisk the egg yolks together with water to a creamy foam in a saucepan.
  • Remove the pan with the egg foam and whisk in the butter. First drop by drop and then with a sharper beam. Avoid whisking in the white sediment from the butter.
  • Whisk in salt and the squeezed lemon juice.
  • If the sauce has not thickened enough, you simply move the saucepan back onto the hob and whisk it up to the desired consistency. Here it is important to be vigilant so that it does not cut itself. Normally, you cook butter sauces in a water bath, but it works great to cook them in a pan directly on the stovetop.

The salmon

  • Cut the salmon fillet into portions. Salt and pepper.
  • Fry in plenty of rapeseed oil and butter, skin side down.
  • Slice a couple of lemons and fry together with the salmon.
  • Scoop the fish with oil and butter so you don't have to turn the fish. In this way, it keeps its nice shape.
  • When the salmon is almost ready, pull it up on the side where it is a little cooler. Add boiled, cooled new potatoes to the butter mixture and fry for a couple of minutes.

Serving

  • Top the fried salmon with a couple of tablespoons of tapenade and Västerbotten cheese. Quickly gratinate with a gas burner until the cheese melts. Sprinkle over finely chopped parsley. Serve with fried lemon, butter-fried potatoes, white asparagus and hollandaise sauce. Enjoy a glass of dry rosé wine from Italian Tommasi.

Flank steak with pepper and sweet potato fries

Finally, time for flank steak on the griddle! For that, I serve pebre, which is a perfect Chilean tomato salsa, as well as sweet potato fries and chili/garlic mayo as a dipping sauce. The increasingly popular flank steak that most people associate with the grill fits at least as well on the grill where the end result is guaranteed to always be perfect.
This is really the food that is perfectly suited to cooking now in the spring sun and then dreaming until the summer season with the grill. Serve with a Portuguese red wine from Ramos and the dinner is complete.
In the recipes and in the film I use a US Wagyu flank steak which is extremely tender and tasty but expensive. Therefore, I count only 100 grams of meat per serving, so count on extra extras so that the guests are full.

Can you cook fish stew on a griddle? Admittedly, there are a plethora of different models on the market, but in general it works very well and if you take the "trouble" you will be richly rewarded with an out-of-the-ordinary pot that your guests will love.
Fish stew can be prepared in any number of ways, but I like to choose the classic Mediterranean elements such as fennel, saffron and white wine in the flavor palette. Of course, there are a lot of ingredients to be sliced and chopped, but what does it matter when the spring sun is shining and there is white wine in the glass. Cheers friends ⚓️
