I was invited to Burträsk and got absolutely fantastic ingredients to cook my Biff Rydberg with. Or how about moose inner thighs and potatoes and onions from the Norrland forest. The beauty was topped with a Dijon cream and grated Västerbotten cheese. Pure and simple flavors served in a northern autumn landscape together with newfound friends made memories for a lifetime. Finally, it will be risotto on the griddle and what could be better then to fill it with butter-fried chanterelles and crispy pancetta of the best kind. Cooking a risotto is really neither difficult nor complicated, but it does require care and dedication. When you reach the goal of that perfect creaminess combined with a well-timed "al dente" while filling the glass with Valpolicella, it's as if time just stops for a moment. It's magic at a really high level without being pretto in the slightest. Just real cooking! ?? ⚓️?‍✈️

T-bone steak and baked potato with melted raclette cheese

This classic and mythical piece detail where you get both the fillet and the steak on each side of the leg. After walking like a cat around hot porridge for six weeks around the tenderloin cabinet at my butcher, it was finally time for them to put the saw to the t-bone steak. It turned out to be a well-sized piece of 1.4 kilos that is perfect for a smaller party. For this, I serve a forgotten classic that is usefully cooked at home in the oven and finished on the grill, namely baked potatoes. I then scrape melted raclette cheese and butter over the potatoes. To this, you serve a spicy Rioja with a clear barrel character and your hospitality is lifted to new heights by the guests

In this week's episode, I offer a super luxurious tapas that will give every true grill lover a memory for life. Due to the high price suits wagyu very well as a tapas or entrée as you only need a small bite of 40 grams to be transported to heaven for a brief moment. Is it that good?
Then I can think that if there is anywhere you should eat this extremely well-marbled and thus excessively tender meat, it is at home at the grill. Sure, you can empty your wallet and order it in at fine restaurants, but then you miss out on the pleasure of owning the cooking process yourself and seeing the joy in your guests' eyes.
Of course, 1300/kilo is an extremely high amount of money for an American entrecote, but compared to the Japanese original, it is at least half the price depending on the quality designation. With respect that all wallets have different thicknesses, but I'll easily exchange a sunken take-out pizza from the neighborhood jam for a couple of tapas with Wagyu on smashed potatoes for exactly the same money.
