Smash burger triple cheese & onion

One of the most popular and fun things you can cook on the grill is probably hamburgers in all its forms. I've made thousands of burgers over the years where one version is better than the other.
In this section, I go hard with three pucks of 85 grams each per burger. Add to that three different cheese slices such as classic cheddar, Pepper Jack Cheese with jalapeno and chili and a fine truffle cheddar.
The camerawoman loves caramelized yellow onions and of course she should have that, but I can't be without my pickled red and silver onions. Add to that wood-smoked side pork from Jokkmokk and a creamy Dijonaise and a toasted brioche bread and you just can't fail.

  • 1 kg prime rib or your favorite mix
  • 4 hamburger bun
  • 8 discs smoked side pork from Jokkmokk
  • 4 discs cheddar cheese
  • 4 discs Pepper Jack cheese
  • 4 discs Truffle cheddar
  • 1 Big yellow onion (to caramelize)
  • 4 large nice salad leaves
  • salt
  • coarsely ground black pepper
  • American mustard

Pickled red and silver onions

  • 1 dl vinegar 12%
  • 2 dl sugar
  • 3 dl water
  • 1 red onion
  • 1 silver onion

Dijonnaise

  • 2 egg yolks
  • 1 tbsp white wine vinegar
  • 2,5 dl rapeseed oil
  • salt & pepper
  • 4 tbsp Dijon mustard

This has to be one of the most difficult dishes ever to eat but at the same time the best "sandwich" I've ever eaten. This pub classic has put both Sloppy Joe's bar and Key West on the map. Join the video and I'll show you how to cook it step by step. The grated cheddar cheese and fried onions I just had to sprinkle on at the end but it's not included in the original recipe. After a really nice wit & etiquette episode last week, I just had to invite my burger-loving friends over for an updated cancer and acid-strömming disc. We softened the taste buds with a 100% West Coast Burger "Extra All" and ended with an equally epic sour strömming burger - but the other way around. To be a bit modern, it became a genuine "shut-up-burger" because it has never been as quiet as it was on Skeppsholmen then. None of us were particularly cocky after a few bites if you say so....️️

The simplest is usually the best or hunger is the best spice. Here is the recipe for a classic smash burger that anyone can cook with perfect results.

  • Large pan to smash the hamburger with
  • Butter paper

Ingredients
  

  • 720 gram high rib sphere
  • 8 discs Bacon
  • 8 discs cheddar cheese
  • 16 discs tomato
  • hamburger dressing
  • salt
  • black pepper
  • 4 hamburger bun
  • possibly whiskey to flambé with

Instructions
 

  • Divide the minced meat into 8 pieces of 90 grams each.
  • Without pressing, shape the mince into round balls
  • Press the minced meat into a hot frying pan using a pan and with a piece of butter paper in between. Salt and pepper.
  • Assemble the burger in a freshly baked bun with fried tomato slices, bacon, cheddar cheese and dressing.
  • Eat and enjoy together with a cold drink
