Smash burger triple cheese & onion
One of the most popular and fun things you can cook on the grill is probably hamburgers in all its forms. I've made thousands of burgers over the years where one version is better than the other. In this section, I go hard with three pucks of 85 grams each per burger. Add to that three different cheese slices such as classic cheddar, Pepper Jack Cheese with jalapeno and chili and a fine truffle cheddar. The camerawoman loves caramelized yellow onions and of course she should have that, but I can't be without my pickled red and silver onions. Add to that wood-smoked side pork from Jokkmokk and a creamy Dijonaise and a toasted brioche bread and you just can't fail.

Ingredients
Smash burger triple cheese & onion
- 1 kg prime rib or your favorite mix
- 4 hamburger bun
- 8 discs smoked side pork from Jokkmokk
- 4 discs cheddar cheese
- 4 discs Pepper Jack cheese
- 4 discs Truffle cheddar
- 1 Big yellow onion (to caramelize)
- 4 large nice salad leaves
- salt
- coarsely ground black pepper
- American mustard
Pickled red and silver onions
- 1 dl vinegar 12%
- 2 dl sugar
- 3 dl water
- 1 red onion
- 1 silver onion
Dijonnaise
- 2 egg yolks
- 1 tbsp white wine vinegar
- 2,5 dl rapeseed oil
- salt & pepper
- 4 tbsp Dijon mustard
