Pan steak with onions

  • 500 gram mixed mince
  • 0,5 dl breadcrumbs
  • 1 dl milk
  • 1 egg
  • 2 tbsp Dijon mustard
  • 0,5 tsp salt
  • black pepper

Sky sauce

  • the steak skin from the steaks
  • 2 dl cream
  • 1 dl water
  • 2 tbsp soy
  • salt
  • black pepper

Pickled cucumbers

  • 1 whole cucumber
  • 1,5 dl water
  • 0,5 dl vinegar (12 %)
  • 3 tbsp sugar
  • 1 tsp salt

In this week's episode, I offer the old Swedish classic that has danced around in fine dining for decades. However, I recommend that you cook and eat it at home together with good friends. Because just the pleasure of standing with your nose over the grill and smelling the aromas of the fried beef tenderloin and garlic butter together with a better red wine in the glass is unbeatable.
Now don't think that this is an extremely expensive dish just because it is classed as a luxury dish. No, the fact is that it costs less than that sunken takeaway pizza from the jam around the corner. Just like almost all other dishes I cook on my griddle. The simplest is usually the best or hunger is the best spice. Here is the recipe for a classic smash burger that anyone can cook with perfect results.

  • Large pan to smash the hamburger with
  • Butter paper

Ingredients
  

  • 720 gram high rib sphere
  • 8 discs Bacon
  • 8 discs cheddar cheese
  • 16 discs tomato
  • hamburger dressing
  • salt
  • black pepper
  • 4 hamburger bun
  • possibly whiskey to flambé with

Instructions
 

  • Divide the minced meat into 8 pieces of 90 grams each.
  • Without pressing, shape the mince into round balls
  • Press the minced meat into a hot frying pan using a pan and with a piece of butter paper in between. Salt and pepper.
  • Assemble the burger in a freshly baked bun with fried tomato slices, bacon, cheddar cheese and dressing.
  • Eat and enjoy together with a cold drink
